Are there just 26 letters (same as the number of alphabets) in the encryption map of this round? (same as the instruction)

Yes.

In a puzzle there may be several different letters that map to the same digit

Does "digit" mean that the only permissible values are 0 through 9, inclusive?

In other words, is it impossible for a letter to represent ten?

It's not possible.
2-digit numbers will be represented by two letters.
The first letter of multiple-digit number cannot be 0.
